Pea, Pimiento & Prosciutto Pasta

Peas can be a great, maybe unusual addition to pasta recipes. And are often used in bona fide Italian recipes. The following recipes tends to serve around six people. Grate as main or side dish.

  • 1½ cups frozen fresh peas
  • 3 Courgette /Zucchini, sliced
  • 100 g prosciutto, cut into strips
  • 300g small pasta shapes such as fricelli or substitute penne
  • 1½ cups pimiento pasta sauce
  • 1 cup small Ligurian olives
  • Salt & freshly ground pepper

Cook peas in boiling salted water for 3 minutes then drain well. Pan fry courgette slices in a little oil to brown. Pan fry prosciutto strips until crisp.

Mean While, cook pasta shapes in pleant of boiling salted water according to packet instructions or until tender.

Drain well and toss with pimiento sauce, hot peas, zucchini, prosciutto and olives. Season to taste with salt and pepper.
